Cream Of Carrot Soup

Cream Of Carrot Soup


This soup is rich in taste, warm and very much comforting. 

Ingredients:

1 small onion, chopped
2 tablespoons butter
5 cups chicken broth if available. (I used our normal drinking water)
3 cups carrots, peeled and cubed (about 7)
1 cup potatoes, peeled and cubed
1tspn dried thyme leaves

1small piece of ginger chopped
Salt and pepper as per the taste.
100ml cream or milk. (I used cream)



Method:

1.In a saucepan, soften the onion and ginger in the butter over medium heat. Add the carrots, potatoes and broth. Add crushed thyme leaves between the palm Bring it to a boil.

2.Cover and simmer gently for about 20 minutes or until the vegetables are tender. In a blender, puree the soup until smooth. Add cream and cook further for more 5 mins. Season with salt and pepper.


NOTE:

  • Normal drinking water can be added when chicken broth is not available.
  • Cream can be substituted with evaporated milk or normal milk. It personally didn't make much difference to the soup.
